FAQ's

  • What days are you open and hours of operation?
    Thursdays & Fridays 11:30 till 3pm or sellout!
  • Whats typically on the menu those days?
    Thursdays we only serve smash burgers & sandwiches (sorry no sides) Fridays we only serve BBQ, sides and desserts.
  • When do yall offer Tacos for lunch?
    The last Thursday of the month we will have Taco Thursday. The menu will be focused on different types of tacos and one or two sides. On the last Thursday of the month will only offer tacos and no smash burgers for lunch.
  • What style service is Gonzo's?
    We offer counter service. Smash burgers are cooked to order on Thursdays and BBQ is sliced to order on Fridays. You can dine in & take out!
  • Can you dine in your location or is it just to go only?
    You can absolutely dine in our shop. Preorders isn’t required, so you can definitely walk in at 11:30am on Thursday or Friday and place your order in person to dine in or take it to go!
  • Do you plan on opening more days?
    Honestly, not at the moment! We are over the moon by the support we receive from you guys already and do not want to sacrifice quality as a cash grab! Thursdays & Fridays starting at 11:30, you know where to find us!
  • Do you still do pop-ups?
    No sorry, we’ve decided not to do anymore popups now that we are in a permanent location. We do plan on doing some festivals throughout the year and we will update our website as we book those events.
  • Do you offer catering?
    Yes we do! We just need at least a weeks notice to prep all catering orders. Please email us at Gonzosmokehouse@gmail.com for pricing and options!
  • Where can I see a menu?
    Our menu changes every week. For weekly menu, see the “Online Ordering” page
  • How can I preorder for BBQ Friday pickup and how does it work?
    For BBQ Friday preorders, we start taking preorders the Sunday before and will usually run until Tuesday evening or if we max out prior to Tuesday. You can pickup your preorder starting at 10am on Friday and do not have to wait in line!
  • How can I preorder for Smash Burger Thursday pickup and how does it work?
    For smash burger Thursday preorders, we start taking preorders the Wednesday before and will usually run until that evening or if we max out prior to. You can pickup your preorder starting at 10am on Thursday and do not have to wait in line!
  • Can we email an order or place an order over the phone?
    No sorry, we do not take any preorders via email or over the phone. All preorders must be placed online. For all catering orders, please email us to place a catering order at least one week prior to your event.
  • Do y’all offer shipping on any of your items?
    No sorry, we currently do not have the permits from the health department to ship any of our food.
  • How do you reheat the frozen vac sealed items?
    REHEATING INSTRUCTIONS Brisket heating instructions (Wrapped in butcher paper)- place wrapped brisket in fridge the day before your event. Day of your event, set oven to 250 degrees. Place the wrapped brisket in a pan in the oven for 1 hour. Increase heat to 325 and cook for another half hour. Remove wrapped brisket from oven. Unwrap and let it cool for 20-25 minutes on the counter. Slice and enjoy! Boudin heating instructions - Defrost the packs in the fridge the night before. Place bags in a pot of boiling water for about 20-30 minutes and you can remove the boudin from the packs and finish them on the grill or oven. Vac sealed frozen items (Turkeys, Pork Shoulders & Briskets) Place vac sealed frozen items in fridge the day before your event to start defrosting. Day of your event, place the sealed bags in a pot of boiling water for 45 minutes. After 45 minutes, take sealed bag out the water. Open bag and slice!
